Backstage Bistro omelets are made with 3 large Grade A eggs served with roasted potato quartet. Egg white omelets can be made upon request.

A traditional omelet mixed with red onion, fresh dill, basil, cilantro, and a touch of garlic and then stuffed with goat cheese.

Fresh Vegetable Omelet – $8.75
This omelet starts with a touch of garlic and fresh herbs and is then stuffed with red onions, green peppers, tomato, mushrooms, and our mozzarella/provolone blend cheese.

Greek Omelet – $9.50
Garlic and fresh herbs are complimented with red onions, sun-dried tomatoes, kalamata olives and goat cheese. This savory omelet is topped with baby arugula and tangy kalamata olive oil.

The Italian Omelet – $9.25
Mild Italian sausage, onions, zucchini, diced tomato with mozzarella, provolone and Parmesan cheese fill this omelet with a touch of garlic and fresh herbs. Warm marinara and freshly grated Parmesan cheese are served on the side.

Tex Mex Omelet – $9.00
A traditional omelet spiced up with our signature “Mexican Blast” herb and hot pepper blend and garlic. Stuffed with onions, green peppers and sharp cheddar cheese and then topped with our fresh pico de gallo salsa, black beans and fresh cilantro. Sour cream served on the side.
